By what percentage will hotel occupancy decline in a recession?

We are a four star Bed and Breakfast doing about 60% p.a. We have been going about 3.5 years. We are wondering about the worst case scenario if there is ever a recession in Australia. I know we are not in one right now, but they do say business confidence is a little shaky at present with petrol prices and uncertainty of interest rates. I would be interested to hear well informed answers from businesses from other sectors as well.
can you please tell me how to start a bed and breakfast business. all resources to search. start up fee and places to receive financing or grants.
